Choy

Choy is a catch-all term for many Asian Greens. Many can be interchanged with each other with a little change in flavor, texture and cooking time, but in some cases, particularly with Yu Choy and Shanghai Bok Choy, the stems are tender and need less cooking time, so you may have to give the stems a head start with other choys.

Be aware, the Collards of the American South are from Scotland, and as tough as you need to be to be a leafy green in Scotland - they take long cooking. Note that Fuzzy Melon, Opo Gourd, Luffa, and sometimes Snake Gourd are quite interchangeable, with similar taste and cooking properties. Ash Gourd and Winter Melon are the same thing. Thai Recipes in English often use "Winter Melon" for Fuzzy Melon (It's an immature Winter Melon). Angled Luffa (Chinese Okra) and Smooth Luffa (Sponge Gourd) are entirely interchangeable, except you'll need a little more weight for Angled Luffa.
