A stew pleasing to Vegetarians and Omnivores. Prep can be done even a day ahead and cooking time is short. Main dish, side dish or lunch.

Tomatoes, ripe
Potatoes (1)
Eggplant (2)
Long Beans (3)
Corn Kernels (4)
Shallot
Garlic
Thai Chili (5)
Makrut Leaf (6)
Lemon Grass
Basil
Coconut Oil
Water
Salt
Pepper

Prep   -   (30 min)
  1. Scald TOMATOES one minute in boiling water. Quench in cold water and peel. Cut into 1/2 inch dice.
  2. Peel POTATOES and cut into about 1/2 inch chunks.
  3. Cut EGGPLANTS into about 1/2 inch chunks.
  4. Slice LONG BEANS into about 1/2 inch lengths.
  5. Chop SHALLOT fine. Slice GARLIC thin. Slice CHILIS thin. Mix all.
  6. Bruise MAKRUT LEAVES.
  7. Crush LEMON GRASS and tie into a knot (white and green).
  8. Chop BASIL fine. Measure is after chopping moderately packed.
Run   -   (30 min)
  1. In a sauté pan heat Oil over moderately high heat. Stir in Shallot Mix until fragrant, about 1 minute.
  2. Add Water, Makrut Leaves, Lemon Grass, and Potatoes. Bring to a boil and simmer for about 10 minutes.
  3. Stir in Eggplants and Long Beans. simmer until Eggplant is softened, about 8 minutes.
  4. Stir in Tomatoes, Corn Kernels, Salt and Pepper. Simmer another 4 minutes.
  5. Stir in Basil and simmer another minute.
  6. Serve hot.
NOTES:
  1. Potatoes:

      I prefer Red Potatoes, which cook tender quickly, though White Rose or similar can also be used. Red Potatoes may differ in other countries. For details see our Potatoes page.
  2. Eggplants:

      Use smaller thin skinned Eggplants that don't need to be peeled, like Japanese, Chinese, or Italian. If you can only get a large Globe Eggplant, you will have to peel it. For details see our Eggplants page.
  3. Long Beans:

      These are found in most Asian markets and in some produce markets, at least here in California. For details see our Long Beans page. If you have to use regular Green Beans, stir them in with the Tomatoes and simmer until they are just tender.
  4. Corn Kernels:

      In order of preference: Fresh, Canned, Frozen.
  5. Thai Chilis:

      If very chili adverse, use just one.
  6. Makrut (Kaffir) Lime Leaves:

      These come 2 leaves to a stem, so this recipe needs 2 stems (unless one of the leaves on your stems is quite small). For details see our Makrut Lime page. If you don't have them, grate the zest of a lime.
  7. Comments:

      I have made minor modifications to the pattern recipe. I added Potatoes to make it more a vegetarian main dish. Potatoes are very popular in Indonesia from Dutch influence. I also added Pepper which it seemed to need quite a bit. Officially, the Corn should be attached to chunks of cob, but I've noticed buffet guests avoid those because they're difficult to handle if not sitting at a table.
