Prep - (25 min)
- Scald TOMATOES 1 minute in boiling water, quench in cold
water, then peel and dice medium. See also
Tomatoes.
- Slice Scallions crosswise 1/8 inch. Measure is after chopping,
lightly packed.
- Crush GARLIC and chop fine. Add to Scallions.
- Grind Cumin and add to Scallions.
Prep - (25 min)
- In a sauté pan or similar heat Oil and stir in Scallion
mix for about 3 minutes.
- Stir in Tomatoes, bring to a boil, then turn heat down and
cook covered, stirring now and then, for about 10 minutes or until
softened.
- Stir in Salt, Pepper, and any Options used. Turn to
low heat and cook uncovered, stirring occasionally, another 10 minutes
or until it is not runny. How "not runny" depends on your use, but it
should not be more liquid than shown in the photo.
- Check seasoning. Serve in a bowl as a table condiment, or hold for
use in recipes.
