Ugali is the "Fufu" of East Africa, served as the main dish instead of rice. It is made from Corn Flour or Semolina Flour rather than Cassava or Yam. This recipe will also work with fine Semolina. | |||
Here in North America we use mostly rice instead, because Ugali has to be served fresh and warm. With just one cook in the kitchen, there's no-one to stir the Ugali. See also Comments. |
