Do Ahead - (25 min)
- Make Tzatziki (up to a day
ahead).
Make - (2 hrs - 45 min work)
- Prepare POTATOES; For tiny Dutch Yellow - nothing. For
very small Red Potatoes - nothing. For larger potatoes - peel and cut
into cubes about 1/2 to 3/4 inch.
- Place Potatoes in a sauce pan with Cold Water to cover. Bring to
a boil and simmer until Potatoes are just done through - in most cases
about 20 minutes from turning on the burner. Cool well.
- Slice Olives. Slice extras for Garnish.
- Chop Dill for Garnish.
- Cut cooked Potatoes as needed. Tiny Dutch Yellow in half. Very
small Red in quarters, or however works.
- Mix All Items (except Garnish) and chill for an hour or two if
you have time.
- Serve chilled, garnished with Dill and sliced Kalamata
Olives.
