Marinated Mushrooms

Far and away better than jarred marinaded mushrooms from the grocery store. Easy to make but takes some pickling time.

Make:   -   (30 min + pickling time)
  1. Brush off MUSHROOMS as needed. Trim stems close to the bottoms and cut the caps if needed - see Mushrooms.
  2. Crush JUNIPER BERRIES lightly.
  3. Peel GARLIC.
  4. In a non-reactive sauce pan, place all Ground items, all Marinade items, and Mushrooms. Bring to a boil, then simmer covered for about 20 minutes, stirring now and then.
  5. For the last 2 minutes of simmering, add Garlic and Dill Seed. Let cool.
  6. Spoon Mushrooms into a jar and pour in Marinade. Add Oil to seal the top. Refrigerate for at least 4 days before using. Refrigerated, these will be good for at least 3 weeks.
NOTES:
  1. Mushrooms:

      Preferred are small white button mushrooms that are still closed (gills not exposed). If your mushrooms are over 1-3/4 inch, cut them in half from the top down, or if quite a bit larger, cut them in quarters. Other types of Mushrooms can be used when available.
  2. Cinnamon

      Preferred is real Cinnamon, not Cassia Bark. For details see our Cinnamon / Cassia page.
  3. Vinegar:

      White Wine Vinegar is preferred, but other 5% vinegars will work.
  4. Options:

      The Dill Seeds can be replaced by Fresh Thyme or Oregano.
  5. Comments:

      Strict vegans should be aware that Mushrooms are far more closely related to Animals than to Plants, and their underground fibers are thought by scientists to act as an Internet for plant communications. Yes, plants communicate, they are aware.
