A very tasty treatment of Ground Beef, with plenty of vegetables. This recipe can be made ahead and reheats well.

Prep   -   (8 min)
  1. Prepare Sazón if not on hand. See our recipe Sazón Completo.
Prep   -   (1-1/5 hrs)
  1. Chop ONION fairly fine. Crush GARLIC and chop fine. Dice BELL PEPPERS fine. Mix all.
  2. Peel CHAYOTE and chop fine. Drain or thaw CORN. Chop CELERY fine. Chop Cilantro small. Mix all.
  3. For Broth, mix Beef Powder with 1 cup Water.
Run   -   (45 min)
  1. In a spacious sauté pan (3-1/2 qt) heat Oil. Stir in Aromatics mix and cook stirring often until Onions are translucent.
  2. Stir in Beef until well incorporated, continuously breaking up clumps.
  3. Stir in Seasonings mix.
  4. Fry Beef, stirring often, until cooked, about 20 minutes. Stir in Broth and Vegies mix. Bring to a boil. Cover and simmer until Chayote is tender, about 20 minutes.
  5. Serve hot with steamed Rice.
NOTES:
  1. Beef:

      I use 73% for best flavor, but leaner ground beef can be used.
  2. Chayote:

      It's a close relative of squash, but its appearance and cooking properties are much different. It's from Central America, but now grown worldwide and easily available in North America. For details see our Chayote page.
  3. Corn:

      Canned, Frozen, or Fresh Sweet Corn are fine for this recipe. Canned is usually preferred over frozen, which is dryer.
  4. Sazón Completo:

      This spice mix is used all over Central America, the Caribbean, and parts of South America. See our recipe Sazón Completo, but other similar seasonings from the region can be used.
  5. Beef Powder:

      Bouillon is much used throughout the Tropics worldwide, because it is not practical to keep stocks without refrigeration. 1 teaspoon = 1 Bouillon Cube. For details see our Beef Powder / Bouillon page.
  6. Rice:

      Rice grown in Central America (not much) and rice imported is all Long Grain indica varieties. Thai Jasmine rice will work fine.
  7. Comments:

      It surprised me, but Worcestershire sauce is much used in the Caribbean and Central America.
