In times past, cream was gathered for several days and became soured. It was then churned to remove the fats and solids as butter, leaving a thin sour milk behind. It's now a cultured milk product and not often on hand in today's kitchens. You'd have to buy a quart to use a half cup for a recipe, so quick substitutes are essential. They are easy and work fine in recipes.
