Chicken Stew with Wine

A meaty stew of chicken, with a light tangy sauce of onions, herbs, white wine and lemon. This dish is served with bread in Georgia, but I usually serve with steamed rice.

Chicken Meat (1)

Prep   -   (45 min)
  1. Cut CHICKEN into cubes about 1-1/2 inch on a side.
  2. Chop ONIONS fine.
  3. Grind WALNUTS fairly fine, but not to a sticky paste. Grind all other Spices items to powder as needed. Mix all together.
  4. Chop HERBS fairly fine. Grate ZEST (rind, yellow part only) of one Lemon. Mix all.
  5. Squeeze Lemon Juice.
Run   -   (50 min)
  1. In a spacious sauté pan (3-1/2 qt), heat Ghee and fry Chicken over moderate heat until it is light golden. Be careful not to burn the fond in the pan. Reddish is OK, but if it gets darker, go to the next step immediately.
  2. Stir in Onions and fry stirring over moderate heat until translucent.
  3. Stir in Spices mix and White Wine. Bring to a simmer, cover and simmer slowly for 25 or 30 minutes until Chicken is tender. Stir a couple of times and scrape up the fond.
  4. Adjust Salt, Pepper and Liquid as needed. Stir in Herb mix and Lemon Juice. Simmer another 3 minutes.
  5. Serve hot.
NOTES:
  1. Chicken:

      Weight is for skinless and boneless. The pattern recipe calls for a 3 pound whole chicken cut into 8 pieces, but I prefer boneless leg and thigh meat for flavor and ease of serving.
  2. Marigold Petals:

      In Georgia French Marigold (Imeruli Shaphrani - Tagetes patula) is used, but it is not easy to find in North America. Pot Marigold (Calendula officinalis petals can be found on-line and are a reasonable substitute. The measure is for finely powdered. Whole petals are springy and hard to measure, but five times the given volume, lightly packed, is about right. For details see our Calendula / Marigold page.
  3. Herbs:

      About 1-1/2 ounces of Cilantro leaves, weighed after the stems and damaged leaves have been removed, will make 1/2 cup chopped fine and lightly packed. About 3/4 ounce of Parsley leaves, weighed after stems and damaged leaves have been removed, will make 1/4 cup chopped fine and lightly packed.
  4. Ghee:

      Called Erbo in Georgia, Ghee is easily available in markets serving an Indian community. Accept only Butter Ghee - Vegetable Ghee is often trans fats. If you can't get (or can't accept) butter ghee, use oil. Avocado Oil would be best but Pure Olive Oil (not virgin) will work fine. For details see our Ghee Page.
