A fine curry when you need a dish both robust and vegetarian. It shows influence from potato curries popular in India. The recipe is authentically African, but there's nothing in it that's native to Africa.

Prep   -   (25 min)
  1. Peel POTATOES. Cut into about 3/4 inch cubes. Pace in cold water and bring to a boil until potatoes are cooked through, about 20 minutes. Set aside.
  2. Quarter ONIONS lengthwise and slice thin crosswise.
  3. Crush GARLIC and chop fine, Slice GINGER very thin. cut the slices into threads and chop threads fine. Mix.
  4. Chop CILANTRO and PARSLEY medium. Mix.
  5. Squeeze LEMON JUICE.
  6. Mix all Spicing items.
Run   -   (30 min)
  1. In a sauté pan or similar, heat Oil and fry Onions until lightly golden.
  2. Stir in Garlic mix until Garlic is aromatic.
  3. Stir in Spicing mix for 30 seconds, then stir in Tomato Sauce, Water and Potatoes. Stir until well distributed and bring to a boil. Simmer for 5 minutes, adjusting liquid to your preference.
  4. Stir in and Cilantro mix and Lemon Juice. Simmer another 5 minutes.
  5. Check seasoning and serve hot with plenty of Steamed Rice or Chapatis. East African Chapatis are made from white flour, so I would use 6 inch flour tortillas.
NOTES:
  1. Potatoes:

      White Rose or similar work well in recipes of this sort. Avoid Klondike Gold type potatoes - they quickly turn to mush with long cooking. For details see our Potatoes page.
  2. Chili Powder:

      Use the type and amount of whatever chili powder or flake you prefer. I usually use Indian Khandela or Reshampatti, which are quite noticeable in this quantity. For details see our Chili Powder / Flake page.
  3. Tomato Sauce:

      Rather than using tomato paste called for in recipes, I like to add a convenient 8oz can of a very simple tomato sauce, which helps make up for deficient tomatoes. My favorite is Faraon Spanish Style, but other simple sauces will also work.
  4. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
