Do Ahead
- If you don't have them on hand, toast Sesame Seeds - see
Note-2 (10 min).
- Make Ssamjang Sauce, see Note-4
(15 min).
Prep - (1-1/4 hrs - 20 min work)
- Slice the BEEF thin across the grain, up to 1 inch wide and 2
inches long. It helps a lot to put it in the freezer compartment for
about 40 minutes to stiffen before slicing.
- Crush GARLIC and chop fine. Chop SCALLION fine. Crush
Toasted Sesame. Mix all Marinade items. Massage into
Beef and set aside to marinate for an hour or more, or even
overnight in the fridge.
Run - (depends on method, up to 25 min -
see Gallery)
- Grill Beef. This can be done on a Korean grill plate, an outdoor
grill, a Korean or Japanese grill pan, or fried in a skillet. It should
be just barely cooked through.
- Keep Beef hot and serve with Ssamjang and Lettuce
Leaves on the side.
- To eat, take a strip or two of Beef and place it on a Lettuce Leaf.
Hit it with a good dash of Ssamjang, and roll it up. It is usual to eat
it in a single bite.
