A little fancy, but very tasty and worth the effort. The pattern recipe was composed by two guys from Jerusalem - to serve in their restaurants in England.

Watercress

Jerusalem, England, and I've made a few adaptions here in California, so this is now sort of a salad without a country.

Do-Ahead:   -   (25 min + chill - 6 min work)
  1. Hard cook eggs, shell them and chill well. For best method see our Boiling Eggs page.
Prep:   -   (25 min)
  1. Tear WATERCRESS into medium size pieces, discarding overly large stems and yellowed leaves. Pour into the mixing bowl.
  2. Coarsely chop DILL, Basil and Cilantro and mix with Watercress. All measures are lightly packed.
  3. In a dry skillet over moderate heat toast Seed Mix stirring often until the sesame seeds are light golden. Cool well.
  4. Crush GARLIC, chop fine, and smash to paste in a mortar. Stir together all Dressing Items.
Run   -   (7 min)
  1. Assemble Salad: Just before serving put 1/2 the Greens in the serving bowl. Top with 1/2 the Seed Mix, dot with 1/2 the Cheese. Lay down the second half of the greens, then pour the Dressing evenly over it. Top with the rest of the Seeds and Cheese. Cut Eggs in half lengthwise and arrange cut side up.
NOTES:
  1. Cheese:

      The pattern recipe called for mild Goat Cheese, but I'm cheap so I used a soft Egyptian feta which worked fine. In the European Union only Greece can call their cheese "Feta" now. All other community members have to call it "White Cheese", which is what the Turks have always called it.
  2. Chili Flake:

      Korean flake works fine and is not very hot. Adjust to your taste. For details see our Chili Powders / Flake page.
  3. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch tt=to taste ar=as required
