Red Beans with Herb Dressing

Best		 Beans (Lobio) are very popular in Georgia. This easy appetizer / salad is made delightfully flavorful with the herbs and spices. Some finely chopped onions could be mixed in as well.

Kidney Beans, dried (1)  
Salt for soaking
-- Seasonings
Herbs (2)
Coriander seed
-- Dressing
Olive Oil
Wine Vinegar, red
Salt
Pepper

Do Ahead   -   (8+ hrs, 5 min work)
  1. Soak KIDNEY BEANS 8 hours or overnight with plenty of water and 1/2 T salt. Yes, salt it improves soaking and cooking.
Make   -   (2+ hrs - 15 min work)
  1. Drain and rinse Kidney Beans. Place Beans in a saucepan with water to cover, bring to a boil and simmer until just tender (be careful not to over-cook). This may be 1/2 to 3/4 hours depending on age of beans. Drain and let partially cool.
  2. Chop HERBS fairly fine. Grind Coriander. Mix.
  3. Mix all Dressing items.
  4. While Beans are still warm, mix in Seasoning mix and then Dressing.
  5. Cool and refrigerate an hour or more to blend flavors.
  6. Serve cool or at room temperature, not chilled.
NOTES:

  1. Kidney Beans:

      Dried Red - Georgian kidney beans are traditionally quite a bit smaller than ours. They probably have big ones now too, because tons of our big red kidney beans were sent from Glendale, California, to neighboring Armenia after the fall of the Soviet Union.

  2. Herbs:

      Weight is after removal of stems and damaged leaves - it's about 1/2 cup loosely packed. This should be a mix of Cilantro, Parsley, Basil, Dill and Tarragon, or as many as you have. Go heavy on the Cilantro and light on the Tarragon.
  3. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
