In Afghanistan, this sweet-tart tomato and pomegranate relish is used with fried, roasted and grilled meats, such as kebabs and patties.

Tomatoes, ripe (1)  
Pomegranate Seeds  
Garlic
Chili, Green (2)
Cilantro Leaves
Mint Leaves
Salt
Sugar

Make   -   (1+ hr - 40 min work)
  1. Dice TOMATOES very small, less than 1/4 inch. Set in a strainer to drain.
  2. Seed POMEGRANATE.
  3. Crush GARLIC and chop very fine.
  4. Seed CHILI and chop fine.
  5. Chop CILANTRO fairly fine.
  6. Chop MINT LEAVES fairly fine.
  7. Squeeze LEMON JUICE.
  8. Mix All Items together. Let marinade for 20 minutes or more.
NOTES:
  1. Tomatoes, Ripe:

      This recipe depends a lot on the quality of the Tomatoes - buy the best you can find.
  2. Chili:

      The pattern recipe doesn't say what kind of green chili, but it does say to seed it. With one Chilis Serrano seeded and the membranes the sharpness is quite faint, but use your own best judgement.
  3. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
