This is a very nice salad or meze (appetizer), and fairly substantial, since it's mostly lima beans. It can be made well ahead and benefits from some rest time to blend flavors.

Lima Beans frozen (1)  
Salted Water
Scallions
Cherry Tomatoes (2)
-- Dressing
Garlic
Salt
Lemon Juice
Olive Oil ExtV
-- Garnish
Mint, dried

Make   -   (35 min + chill)
  1. In a suitable sauce pan, place LIMA BEANS and enough Salted Water cover them well. Bring to a boil, cover and simmer until tender (about 25 minutes). Drain and refresh under Cold Water until well cooled. Drain well.
  2. Slice SCALLIONS very thin, white and green.
  3. Slice TOMATOES. Cherry Tomatoes one cut lengthwise, two crosswise. For the much small Grape Tomatoes, one or two slices crosswise.
  4. Crush GARLIC and chop small. Place in a mortar with Salt and pound to a paste. Mix in LEMON JUICE and Olive Oil.
  5. Mix all Items together and mix in Dressing. If you have time, let rest in the fridge for an hour or more to blend flavors.
  6. Serve lightly chilled.
NOTES:
  1. Lima Beans:

      I prefer the larger Fordhook Lima Beans, but due to the yuppie craze for baby everything they are no longer much available, so I used frozen Baby Lima Beans. See also Comments.
  2. Cherry Tomatoes

      Here in Southern California these have been mostly replaced by the much smaller Grape Tomatoes, Other small tomatoes can be used, cut appropriately.
  3. Comments

      The pattern recipe called for dried "Butter Beans". What a "Butter Bean" is is regional, and I'm certain the photo of the dish was not made with dried beans, They might have been fresh, but could have been frozen. It is common for cookbooks published in England to have photos that are much nicer than what you'd get from the recipe. Frozen beans make a much better looking dish than dried, and with a lot less effort.
