Tashkent Salad with Meat

This simple salad includes a lot of herbs and radishes, along with strips of Beef or Lamb. It is typical of Tashkent, capitol of Uzbekistan. The locals learned mayonnaise dressing from the Russians.

Beef/Lamb, boiled  
Onion
Butter
Daikon Radish
Radishes, red
Salt
Pepper
Dill, fresh
Parsley, flat
Cilantro
-- Dressing
Mayonnaise (1)
Lemon Juice (2)
-- Garnish
Egg, hard boiled  

One and a third pound will make 5 salad size servings.

Make   -   (1-1/2 hrs - 25 min work)
  1. With your MEAT well chilled, slice it into juliennes about 1 inch long.
  2. Quarter ONION lengthwise and slice thin crosswise.
  3. In a small skillet, heat Butter and fry Onion, stirring until uniformly medium brown. Drain on paper towels and let cool, discarding remaining butter.
  4. Peel DAIKON and cut into juliennes about 1 inch long (I use a julienning vegetable peeler). Place them in cold water for about 15 minutes, then drain well.
  5. Slice RADISHES thin.
  6. Chop Dill, Parsley and Cilantro small.
  7. In a large mixing bowl, combine all Salad items including Salt and Pepper.
  8. Mix in Mayonnaise, just enough to bind the salad. That will be between 5 and 6 tablespoons. Stir in Lemon Juice if used.
  9. Refrigerate for an hour or so.
  10. Serve lightly chilled, garnished with sliced EGG (if desired). The photo shows radishes, because sliced eggs can be a photographic disaster.
NOTES:
  1. Mayonnaise:

      Home made is best, but can be risky, especially in business friendly Red States, due to the raw egg yolks. Second best is Hellmann's (east of the Mississippi) or Best Foods (west of the Mississippi), as nearly all food writers agree.
  2. Lemon Juice

      This is my addition, because I felt it really needed it. Actually, I added a little chili too, because I live in Southern California.
