Red Cabbage Salad

Incredibly simple to make, this is one of my favorite salads. Like other very simple recipes, quality of ingredients and exact proportions are critically important.

Red Cabbage
Olive oil ExtV  
Malt Vinegar
Salt
Sugar

Make   -   (2-1/4 hrs - 10 min work)
  1. Core the CABBAGE and cut lengthwise into narrow slices, then cut the slices to shred about 2 in long. Break up clumps.
  2. Toss Cabbage with Olive Oil to coat, then add Vinegar, Salt and Sugar. Toss thoroughly.
  3. Let sit for 2 hours or more to soften some, tossing occasionally to keep dressing even.
  4. Chill lightly and serve
NOTES:
