A tasty salad with a good mix of contrasting textures. It's easy to make and suitable for table, buffet, or picnic service.

Cauliflower (1)
Dill Pickle
Basil Leaves
can Corn
Apple (2)
Yogurt plain  
Mayonnaise (3)
Salt

Make   -   (35 min)
  1. Cut CAULIFLOWER in half lengthwise and cut out core. Slice both halves a little over 1/4 inch thick, then cut the slices into dice a little over 1/4 inch in size. Yes, they will be very disorderly, but they should all be about the same size.
  2. Slice PICKLES lengthwise into strips about 1/4 inch wide, then slice very thin diagonally.
  3. Chop BASIL fine.
  4. Open can of CORN and drain.
  5. When ready to apply Dressing, peel APPLE and shred on the big hole side of your box grater.
  6. Mix All items tossing well so everything is evenly coated.
  7. If you have time, give it some rest in the fridge to blend flavors. Serve lightly chilled.
NOTES:
  1. Cauliflower:

      Some recipes have the Cauliflower cut into larger pieces than in this recipe, but they should still be fairly small.
  2. Apple:

      The pattern recipe calls for a Golden Delicious Apple, but today there are many other apples that will work fine.
  3. Mayonnaise:

      Home made is best, but can be risky, especially in business friendly Red States, due to the raw egg yolks. Second best is Hellmann's Real (east of the Mississippi) or Best Foods Real (west of the Mississippi), as most food writers agree.
  4. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
