This salad presents an interesting mix of semi-exotic (but easy to find) ingredients. It's attractive and delicious. This has to be a built salad, if you just toss it, the lettuce rises to the top and everything else sinks.

Prep   -   (20 min)
  1. Drain PALM HEARTS and cut into 1/2 inch segments.
  2. Cut PINEAPPLE into about 1/2 inch chunks.
  3. Peel and seed AVOCADO. Cut into about 1/2 inch dice.
  4. Squeeze LIME JUICE (enough for both uses).
  5. Tumble 1 T Lime Juice and 1/4 t Salt with Avocados.
  6. Tear or cut LETTUCE into bite size pieces, discarding thick white stems.
Dressing   -   (12 min)
  1. chop SHALLOT very fine. Grind CUMIN. Squeeze JUICE.
  2. Mix together all Dressing Items in a jar and shake vigorously.
Serving   -   (5 min)
  1. Whether building in a single large bowl or in individual salad bowls, first set down a layer of Lettuce, then arrange Palm Hearts over. Place Pineapple and Avocado dice over the Palm Hearts.
  2. When ready to serve, shake the Dressing jar vigorously and pour the dressing over the salad. Once dressed it should be served immediately.
NOTES:
  1. Palm Hearts:

      [Hearts of Palm] These can be found in cans (or in jars at a higher price) in the "exotics" section of many North American markets. 8 ounces is about what you get in a 14 oz can. For details see our Hearts of Palm page.
  2. Pineapple:

      The pattern recipe calls for fresh, but if you don't have another use, I suggest an 8 oz can, packed in Pineapple Juice, NOT syrup.
  3. Avocados:

      Avocados need to be ripe, but not so ripe they are mushy, or they will make a mess. They need to cut into neat cubes.
  4. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
