An important dip/dressing used from Iran and the Levant across North Africa, through Morocco, and also in Greece, Turkey, and Armenia. It is used for green salads, vegetables, fish, and meat dishes.
If used as a dressing for fish you might up the lemon juice by 1 T. I usually skip the sugar as do many other recipes. Some season with a bit of black pepper.

Tahini (1)

Garlic

Make:   -   (15 min)
  1. Stir Tahini very well (the oil tends to rise to the top).
  2. Crush GARLIC, slice and chop very fine.
  3. Mix All Ingredients thoroughly. Use a blender or mini-processor if you like, but I find that a lot more trouble than it's worth. I just chop the garlic very fine and stir the dressing well.
NOTES:
  1. Tahini:

      This paste made from lightly toasted sesame seeds similarly to peanut butter. It is available in any market serving a Levantine or Middle Eastern community. Asian sesame paste is different. For details see our Sesame page.
