Radish & Carrot Salad

This simple salad is favored for winter in Turkey, and is often served with meat dishes. We don't have winter in Southern California but it works fine here anyway.

Daicon Radish (1)
Carrots
Garlic
Olive Oil ExtV
Wine Vinegar white  
Parsley
Salt
Pepper

Make:   -   (45 min - 25 min work)
  1. Peel DAIKON and grate on the course side of your box grater. Peel CARROTS and grate on the fine side. Crush GARLIC and chop very fine. Chop PARSLEY fine.
  2. Mix All Items. Let stand 20 minutes or so turning a couple of times before serving.
  3. Serve chilled or at room temperture.
NOTES:
  1. Daikon Radish:

      Some types of radish used in Anatolia are not much available in North America, but Japanese or Korean Daikon make an acceptable substitute.
  2. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch ar=as required tt=to taste
