Roast Chicken, Sweet Tea

An easy to make Chicken roast, attractive and with a unique flavor. Suitable for dinner or party.

Chicken Joints (1)
-- Marinade
Sweet Tea (2)
Lemon Juice
Cajun Seasoning (3)

Olive Oil
Salt
Pepper

Do-Ahead   -   (20 min + 6+ hrs marinade)
  1. Mix together all Marinade Items.
  2. In a pot, place Chicken and Marinade. Cover and marinate for at least 6 hours or up to 24 hours.
Run   -   (50 min)
  1. Preheat the oven to 450°F/230°C.
  2. Lift Chicken pieces from the Marinade, drain well and pat dry with paper towels.
  3. Place Chicken in a large mixing bowl. Pour in a few tablespoons of Olive Oil and tumble until coated.
  4. Line a rimmed baking sheet with Parchment Paper and arrange Chicken on it skin-side up. Pull skins up to cover as best you can. sprinkle with Salt and Pepper.
  5. Slide Chicken into the Oven and roast until internal temperature is 165°F/75°C and it is nicely browned, about 35 minutes.
  6. Serve warm by any style you desire, and any accompaniments of your choice.
NOTES:
  1. Chicken Joints:

      This can be Legs, Thighs, Legs and Thighs, or Thighs with Legs attached, as you prefer, or what has the best price. All should be skin-on, bone-in. It can even be made with wings, but I wouldn't use breast which tends to lack flavor and be dry and stringy.
  2. Sweet Tea:

      This can be purchased, or easily made by our recipe Sweet Tea.
  3. Cajun Seasoning:

      This can be purchased, or better made by our recipe Cajun Seasoning #2.
  4. Comments

      For buffet service I would use boneless Chicken Thighs (skin-on). After roasting, I would cut into largish bite size pieces and serve in a covered electric skillet set to "Warm".
