Red Cooked Beef & Daikon

Red cooking is very popular in China, particularly in Jiangnan (South of the (Yangtze) River) region. It is well adapted to tough pieces of meat, but has much wider uses.

Prep   -   (20 min)
  1. Cut BEEF into cubes about 1-1/2 inches on a side.
  2. Peel GARLIC and crush lightly.
  3. Cut Scallions into 2 inch lengths. Slice GINGER about 1/16 inch thick. Mix together All Seasoning Items.
RUN   -   (2-1/4 hrs)
  1. Bring 4 cups Water to a boil and hold at a simmer.
  2. In a heavy Duch oven or similar heat Oil, then stir in Garlic, crushing it against the sides of the pot to flavor the oil.
  3. Stir in Beef and fry stirring over high heat until lightly browned on all sides.
  4. Stir in the Seasoning Mix until well distributed, then stir in Boiling Water. Set the heat to a low simmer and simmer covered for 1-1/2 hours stirring a couple of times.
  5. Peel DAIKONS and cut into interesting chunks (shape depending on size). Stir them into the pot. Bring back to a boil and simmer another 1/2 hour, or until Beef is tender, stirring a couple of times.
  6. Serve with plenty of long grain rice.
NOTES:
  1. Beef:

      One of the tougher cuts will do fine here, rump roast, round roast, chuck roast or whatever. here, but trim away all removable fat and membranes..
  2. Daikon:

      Select modest sized radishs, up to 1-1/2 inch diameter. Larger ones are fine raw sliced or grated, but cooked they are annoyingly fibrous.   Note: when a Chinese recipe calls for "Turnip", or a package says it contains "Turnip", Daikon is what it actually means. The pattern recipe, realizing the possibility of confusion, called it "Icicle Turnip". For details see our Daikon Radish page.
