A Hungarian party essential, this cheese spread goes very well with robust substrates like dark or whole wheat bread, rye crackers and the like. It may be a bit strong for white things.

Feta Cheese (1)
Farmer's Cheese  
Butter, soft
Onion
Caraway seed
Anchovy Fillet
Paprika
Dijon Mustard
Sour Cream

Make:   -   (10 min)
  1. Beat together Feta Cheese, Farmer's Cheese and Butter until smooth.
  2. Grate ONION. Crush Caraway Seeds and Anchovies. Mix all into Cheese mix.
  3. Stir Paprika and Mustard into the Cheese mix. Beat all together until smooth.
  4. Beat in Sour Cream as required to get the consistency you want. It can be as little as 1/4 cup for a spread, a fair amount for a dip.
NOTES:
  1. Cheeses:

      Other cheeses people use are cream cheese, hoop cheese, or any other soft, mild white cheese. This spread was traditionally made from Lipto Cheese from Liptov, now in northern Slovakia, and served in Hungarian casinos. Lipto is a Feta type sheep cheese that you're not likely to find in your local market.
