Tajik Bread Salad

This salad is very popular in Tajikistan, and is often served on a hollowed board for guests to take as they please. It is usually accompanied by hot Non bread (Naan).

Flatbread (1)
Olive Oil

Do Ahead   (30 min - 7 min work)
  1. Preheat oven to 375°F/190°C.
  2. Cut FLATBREAD into small wedges.
  3. Tumble Flatbread wedges with Olive Oil, just enough to coat lightly. Spread on a baking sheet
  4. Toast Flatbread wedges until lightly browned. Cool.
Prep   -   (30 min)
  1. Dice TOMATOES about 1/2 inch. Let drain in a strainer (do not squeeze).
  2. Slice CUCUMBERS in half lengthwise and slice crosswise about 1/4 inch thick.
  3. Slice SCALLIONS thin, green and white.
  4. Remove stems from CILANTRO and DILL. Chop coarse. Mix.
  5. Make Dressing:   Grind Coriander Seed. Squeeze Lemon Juice. Mix all Dressing items in a small jar.
Finish   -   (7 min)
  1. Mix all Salad items.
  2. When ready to serve, shake up Dressing and pour over the salad. Toss to coat.
  3. Crumble Feta Cheese over the salad and add Flatbread wedges. Tumble briefly, and serve immediately.
NOTES:
  1. Flatbread:

      The pattern recipe calls for Pita Bread, split into half thickness before oiling and toasting. For the photo example I used Flour Tortillas, which are a little more durable if the salad needs to sit for awhile, as for buffet service. If you have some way to brown the bread other than the oven, that's fine.
  2. Cucumbers:

      Use Persian or some other small diameter cucumber that doesn't need peeling or seeding (English, Mediterranean, European, Japanese.) If you have only the standard waxed green blimps, peel, seed and quarter them lengthwise before slicing. Weight would be after peeling and seeding.
  3. Feta Cheese:

      In Tajikistan, they make the cheese by boiling Yogurt with Salt until if firm up into curds. Feta is considered a good and easily available substitute.
  4. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
