A delicious salad, striking in appearance and very easy to make. For vegetarian, just skip the mortadella, it will hardly be missed. This recipe will make 6 salad size servings.

This salad can be made in advance and refrigerated, then just pour on the dressing and toss to finish.

Make   -   (12 min work + chill time)
  1. Cut fairly thin slices of PROVOLONE and MORTADELLA. into strips about 1/4 inch wide and 1-1/2 inches long.
  2. Core BELL PEPPER and cut into strips about 3/8 inch wide and 1 inch long.
  3. Slice TOMATOES into medium wedges, or however you like.
  4. Cut CUCUMBERS into strips about 1/4 inch wide, 1/8 inch thick and 1-1/2 inch long. If you have only standard green blimps you'll have to peel them, cut them in half lengthwise and seed them before cutting.
  5. Cut CELERY into strips similar to the other vegetables (see Note-3).
  6. Drain and rinse Kidney Beans (presuming canned).
  7. Cut or tear LETTUCE into small pieces.
  8. Toss everything together evenly and chill well before serving (or see Note-4).
  9. Make Dressing:   Put all Dressing items in a jar and shake up well.
  10. When ready to serve, place Salad in a bowl. Shake up Dressing until frothy. Pour over Salad.
NOTES:
  1. Cucumbers:

      These should be Persian, Japanese, or some other cucumber that doesn't need to be peeled and seeded. If you have only standard green blimps you will have to peel and seed them.
  2. Kidney Beans:

      In Italy, large white kidney beans (Cannellini) are most common, but I prefer the flavor of big red kidney beans, so that's what I use. Canned is fine, or any other source, so long as they're fully cooked for the salad.
  3. Celery:

      the pattern recipe calls for de-stringing the Celery. I find this entirely unnecessary.
  4. Serving:

      For more formal service toss everything together except the lettuce. After chilling, line bowls with the lettuce, then top with everything else. This doesn't work well for buffet service from a single large bowl, so just toss in the lettuce with everything else for that serving style.
