This is a reverse engineered substitute for Kenyan Royco® Mchuzi Mix. Royco is as universal in Kenya as Maggi® Cubes are in Nigeria. This recipe fills a 4 oz spice jar.

Beef Bouillon Powder (1)  
-- Grind
Coriander Seeds
Cumin Seeds
Fennel Seeds
Cinnamon
-- Powdered
Cornstarch
Turmeric
Garlic Powder
Ginger Powder
Citric Acid
Sugar
Salt
MSG (opt. 2)

Royco® is also made in a Chicken version (just substitute Chicken Powder for the Beef Powder). For a Vegetarian version, just omit the Beef Bouillon Powder, perhaps add some Vegeta. See also Comments

Make   -   (15 min)
  1. Grind all Grind items together to a fine powder in your spice grinder (see Spice Grinder).
  2. Mix All items together well.
  3. Well sealed in a Spice Jar away from heat and direct sunlight it will be usable for at least 6 months.
NOTES:
  1. Beef Bouillon Powder:

      I have a jar of "Knorr Beef Flavor Bouillon" powder on hand, and it works well, but if you haven't that on hand, you can crush three Beef Bouillon Cubes. For details see our Beef Bouillon Powder page. For other versions see our Chicken Powder and Vegeta pages.
  2. MSG:

      [Monsodium Glutimate]   This somewhat controversial flavor enhancer is the fourth most important ingredient in Royco powder, after cornstarch, salt, sugar. Use it or not as you please.
  3. Comments:

      This mix was formulated and tasted along side genuine Royco and the taste is very close. There are some differences. One is color. Ours is darker as it is made with whole ingredients, while some of Royco's ingredients are colorless "nature identical flavors", and the photo specimen was made without MSG, which would make it lighter, and change the flavor somewhat.
  4. Spice Grinder

      A little whirling blade coffee grinder is excellent for this job - mine is a Krups. Of course you can also do it the traditional way, pounding it in a big stone mortar.
