Do Ahead   -   (35 min)
  1. Prepare Pique if not on hand.
  2. Prepare Adobo and Sazón if not on hand.
Prep   -   (10 min)
  1. Grind CUMIN and ALLSPICE. Mix all Seasonings items.
  2. Quarter ONION lengthwise. Cap and core CUBANELLE   (tougher skinned chilis need not be peeled). Peel GARLIC and lightly crush. Mix all.
  3. Prep BROTH as needed.
  4. Squeeze LEMON JUICE. Add to Broth along with SOY SAUCE and BAY LEAVES.
Aromatics   -   (15 min) - Can be prepared while the Beef is simmering.
  1. Cap and core BELL PEPPERS. Cut into strips about 2 inches long and 1/4 inch wide.
  2. Quarter ONION Lengthwise and slice thin crosswise. Add to Bell Peppers
  3. Chop CILANTRO small and add to Bell Peppers. Measure is after chopping moderately packed.
  4. Slice OLIVES crosswise in half or thirds depending on size. Drain CAPERS. Add both to Bell Peppers.
Beef   -   (3 hrs)
  1. Select a wide heavy bottomed Sauté pan (3-1/2 qt) or similar. It must be coverable.
  2. Cut BEEF to fit your pan. You want to pull it into shreds about 2-1/2 inches long after cooking, so keep in mind it will shrink some lengthwise in cooking.
  3. Coat Beef on both sides with the Salt and Pepper.
  4. Heat Annatto Oil over moderately high heat and, in batches, fry Beef on both sides until lightly browned. Be careful not to burn the Annatto or the fond that adheres to the pan. Set Beef aside.
  5. Stir Onion mix into the pan and fry over moderate heat until Onion is just translucent, minding that the fond doesn't burn. Chocolat is OK, black is not.
  6. Stir in Seasoning mix until well distributed. Stir in Broth mix, and bring to a simmer, scraping up the fond adhering to the pan, incorporating it into the liquid.
  7. Return Beef to the pan. Pour in Water to just cover the Beef. Bring to a boil, turn to a simmer, cover and let simmer for 2-1/2 hours until the Beef is very tender. Remove to the cutting board.
  8. Boil down the broth (if necessary) until you have just 2-1/2cups. Strain through a wire strainer reserving all liquid. Measure, and if you have less than 2 cups, add Broth or Water to bring it to 2 cups.
  9. Pull the Beef into thin shreds 2 to 3 inches long.
Final   -   (25 min)
  1. Place Shredded Beef in a wide pan.
  2. Crush 3 cl GARLIC and chop very fine. Add to Beef.
  3. Stir in Broth and Tomato Sauce until well distributed.
  4. Stir in Aromatics mix, Pique, and White Wine.
  5. Bring to a simmer, cover, and simmer for about 20 minutes.
  6. Serve hot - see Serving.
NOTES:
  1. Beef:

      The Beef must be a piece that is cut with the grain, not across, so you can pull it into long shreads after cooking. Brisket and Flank are mentioned. Here in Los Angeles we have "Shredded Beef", intendeed for shredding and relatively economical. Weight is after removing excess fat.
  2. Annatto / Achiote Oil:

      [Achiote]   A very important ingredient in Caribbean cuisines. Easily made by our recipe Achiote / Annatto.
  3. Adobo:

      An essential seasoning powder for Caribbean cuisines. It is very easy to make by our recipe Adobo.
  4. Sazón:

      Another essential seasoning powder for Caribbean cuisines. Most use little packets of Goya Sazón, but far and away better, and very easy to make, by our recipe Sazón
  5. Cubanelle:

      [Italian Frying Pepper]   This is a fairly thin walled, thin skinned Chili with almost no heat, usually sold yellow green color but can be red. It is imperfectly available here in Southern California. For details and substitutes, see our Cubanelle Chili page.
  6. Broth, Chicken:

      In the Tropics this is usually made up with Chicken Powder or Chicken Stock Cubes.
  7. Tomato Sauce:

      This should be a very simple tomato sauce. My favorite is Faraon Spanish Style which comes in convenient 8 oz cans, but other simple sauces will also work. I call for 16 ounces, but 24 ounces would not be out of order.
  8. Serving:

      In Cuba, this dish is properly served hot with "Moros et Christianos". This is Black Beans and Rice. These may served side by side, or mixed together, where the Moros kind of win as the Christianos get a dark color. Another plan is to cook them separately and just toss them together lightly. Some Vegetables are usually part of the serving. They may be raw or cooked.
  9. Comments

      This recipe is, of course, easier in a Caribbean household than elsewhere, as Adobo, Sasón, and Pique will almost always be on hand. On the other hand, these can become standard pantry staples in your home.
  10. History:

      The ancestor of this recipe is a Sephardic Jewish recipe from Spain. Cooking on the Sabath was forbidden, so they needed a long cooking dish to make Friday evening to serve Saturday. Sephardic Jews fled to Morocco, Turkey, and Italy. Some came from there to the Caribbean, bringing influences from those countries. It was further adjusted for Caribbean tastes and ingredients. While the National Dish of Cuba, versions are also made in Puerto Rico, the Canary Islands, Nicaragua, Honduras, and the Philippines.

    The name, "Old Clothes" comes from a story that a man was so poor he could not afford food for his family. He boiled some old cloths for dinner, and from his love for his family they were magically turned into a delicious stew.
