Sausage Tomato Sauce for Pasta

A relatively light meat sauce for use with simple shapes. Orecchiette is traditional, but many other shapes work fine. The character of the sausage is important.

Celery

Bacon

Prep   -   (35 min)
  1. Skin the SAUSAGES and chop up very small.
  2. Chop ONION, CELERY and CARROT fine. Mix.
  3. Chop BACON small.
  4. Crush GARLIC CLOVE sufficiently to crack it.
  5. Grate CHEESE for garnish.
Run   -   (1-3/4 hr)
  1. In a sauté pan, heat Butter and stir in Onion mix, Bacon and Herbs. Fry stirring over moderate heat until onions are translucent.
  2. Stir in Sausage and continue to fry stirring and breaking up lumps of sausage until onions threaten to brown.
  3. Stir in the Wine and cook stirring over moderate heat until evaporated and the ingredients start to fry again.
  4. Sprinkle on the Flour and fry stirring a couple minutes until it is cooked but not browned.
  5. Stir in the Tomato Purée and Water. Bring to a simmer, cover and simmer over very low heat for 1-1/4 hours. Check frequently to see if more water is needed.
  6. Adjust consistency (add water or simmer uncovered). Remove herb sprigs and garlic clove. Season to taste with Salt and Pepper.
  7. Serve warm over warm pasta, garnished with Pecorino Cheese.
NOTES:
  1. Sausage:

      Use a well seasoned mild Italian sausage, or one just a little hot. Other well seasoned sausages can be used, but the flavor will differ.
  2. Method:

      You may have to make your own purée from canned tomatoes. Run in a mini-prep processor or by whatever means you have. If you have the mini-prep you might as well chop the vegetables in it too to save time.
