Cilantro Garlic Mayonnaise

This recipe makes a fine dip, sandwich spread, or sauce for seafood and potatoes, and is excellent for crudités. See also Comments.

Garlic
Thai Chili
Cilantro
Lime Juice
Mayonnaise (1)
Salt

Make   -   (50 min)
  1. Crush GARLIC fine. Chop CHILI fine. Mix and pound to a paste in a mortar, with a little Salt to aid the pounding.
  2. Chop CILANTRO fine. Measure is after chopping, moderately packed.
  3. Squeeze LIME JUICE.
  4. Mix All Items. Keep Refrigerated. It'll be good for several days.
NOTES:
  1. Mayonnaise:

      This is an important ingredient so should be high quality, such as Best Foods Real Mayonnaise (branded Hellmann's Real Mayonnaise east of the Mississippi).
  2. Comments:

      The pattern recipe makes the Mayonnaise on the fly, and calls for Pasteurized Eggs for safety (not easy to find around here). I instead started with a good quality Mayonnaise and mix in the other ingredients.
  3. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
