Duros are a very popular street snack in Mexico, variously seasoned. They are ridiculously easy to make and can serve as vegetarian Chicharrónes for serving to mixed company.

Deep Fry Oil  
Seasonings

Make   -   (15 min)
  1. In a wok or Kadhai heat Oil to 375°F/190°C or a little hotter.
  2. Drop in a few Duros and swish them around with your Spider until evenly puffed (just a few seconds). Scoop out and drain on a wire rack, preferably convex side up.
  3. These can now be saved for many days in a sealed bag.
  4. Serve Duros seasoned as desired. Standard Mexican seasonings are chili powder, salt, lime juice, lemon juice, hot sauce, etc. I have also served them plain with Philippine Lumpia Dipping Sauces, even though they don't have Duros in the Philippines (they should!).
NOTES:
  1. Duros:

      These are a wheat pasta formulated to foam up when deep fried. They are very hard, thus "Duros". They can be found in markets serving a significant Mexican population, or on-line. For details see our Duros page.
