Vinegar Garlic Dip with Chili

A typical Philippine dipping sauce, used with spring rolls, crisp fried items and roasted meats. Caution: this dip is very much to Philippine taste - it's strong. See also a version without chilis, Vinegar Garlic Dip.

Vinegar (1)  
Garlic
Salt

You could probably tame this dip some by reducing the Garlic to 3 cloves.

Make   -   (7 min)
  1. Crush GARLIC and chop very fine.
  2. Chop CHILI fine.
  3. Mix All items together. Let age for an hour or so if you can.
NOTES:
  1. Vinegar:

      Preferably use a high quality Philippine cane vinegar, or a Philippine coconut or palm vinegar. Lacking those, rice vinegar can be used. If all you have is white distilled vinegar, dilute it a touch with water. For details see our Sours page.
  2. Chilis:

      This dip should be fairly spicy. The photo specimen used Thai chilis but serranos or whatever is available will be fine. For details see our Chili Page.
  3. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
