Breads of Europe
Europe is a land of 10,000 breads, so we clearly
can't describe them all here. We will settle for just some that
have particular culinary uses, are particularly traditional in
their homeland, or are breads we have published recipes for.
In the past, breads varied greatly from one region of Europe to
another, because of differences in the available grains and the means
to bake bread. While breads are becoming more uniform, this past still
has a strong influence on breads preferred in the various regions.
