My Lefse Line. Note: the tray of patties should actually
be in the fridge.
Bring patties out two or three at a time. You also need a place
for Lefse to cool. They cool very fast so you don't as much space
as shown. Note: the four in the front are a bit overdone.
The roller shown is a real Lefse roller with grooves.
You could use
a regular roller, but the sock for it is NOT optional. The Lefse Stick
is also NOT optional. You can't handle Lefse without it.
The Hulisen
Flour Duster is a real gem, refilling instantly and sprinkling evenly.
Making Lefse you will be doing a whole lot of sprinkling. You
also need a fabric rolling surface. Like the roller sock, it holds
a lot
of flour.
The absolute best way to "mash" potatoes.
It can also be used to mash other root vegetables.
Be sure you get a sturdy one. Some have a band
that slips and makes them useless.
This Lefse Griddle is 16 inches across. You
can use some other griddle if you arent making
Lefse that need that size. It needs low sides
so you can work with the stick, and needs to
get up to 400°F/200°C. I bought mine years
ago to make Ethopian injera bread, which also
needs a lot of real estate, and have used it for
many other kinds of flatbreads and pancakes
since. There is a lid available for uses that
require it (not lefse). This one is sold by
Bethany Housewares.
