Spectacularly tasty fried potatoes with a savory glaze. Can be used as a side dish, snack, or light main dish with a salad.

Potatoes (1)
Garlic
Thai Chili (2)
Sugar
Oil
Soy Sauce Sweet (3)  
Salt

Prep   -   (30 min)
  1. Peel POTATOES and cut into about 3/4 inch chunks.
  2. Crush GARLIC and chop fine. Chop CHILIS fine. Mix both with Sugar and pound to paste in a mortar.
Run   -   (25 min)
  1. In a Wok or Kadhai heat Oil over moderately high heat. Stir in Garlic Paste until fragrant, about 20 seconds, then stir in Potatoes Fry tumbling over moderately high heat until Potatoes are crisp and lightly browned on the outside. Not too hot or they will brown before cooking through
  2. Stir in Sweet Soy Sauce and Salt. Tumble Potatoes until coated with the Soy Sauce. Take off the heat.
  3. Serve hot as a light main dish, side dish, or snack.
NOTES:
  1. Potatoes:

      I prefer Red Potatoes, which cook tender quickly, though White Rose or similar can also be used. Red Potatoes may differ in other countries. For details see our Potatoes page.
  2. Thai Chilis:

      If very chili adverse, use just one. You could substitute 1/4 to 1/2 teaspoon Chili Flake, hotness per your own best judgement.
  3. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch ar=as required tt=to taste
