A very important ingredient in Indonesia and the Philippines. It is more intense than the Thai / Vietnamese version. Trasi is always very dry, while Bagoong is usually looser and contains oil, so just mix some in for that.

Make Simplest:   -   (3 min)
  1. Spoon out as much RED MISO as you need.
Make Simple:   -   (15 min - Makes about 1/3 cup)
  1. Grind WAKAME to powder in you spice grinder or by whatever means you have.
  2. Work Wakame into RED MISO until evenly distributed.
  3. Kept in a tightly sealed jar in the fridge it'll last for months.
Make Complex:   -   (1 hr - 30 min work - Makes about 1/2 cup.)
  1. Soak SHIITAKES in hot water for at least 30 minutes. Chop very fine. slice GINGER very thin and chop very fine, mix with Mushrooms. Mash in a morter or reduce to paste by some other means.
  2. Grind WAKAME to powder in you spice grinder or by whatever means you have.
  3. Work Wakame and Mushrooms into RED MISO until evenly distributed.
  4. Kept in a tightly sealed jar in the fridge it'll last for months.
NOTES:
  1. Wakame:

      [Sea Tangle]   Other seaweeds could be used, but Wakame is usually the most available.
  2. Comments:

      I use an Indian Mixie for the whole process. A good Food Processor will probably work. It does take some scraping down, especially if Mushrooms are included. I usually just use Simple.
  3. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
