Cucumber & Tomato Salad

A good all-purpose Philippine Salad that won't wilt for picnic or buffet. It can be made as much as a day ahead and refrigerated.

Salt
Tomatoes (2)
Onion (3)

Thai Chili (opt)
Vinegar (4)

Make   -   (25 min)
  1. Slice CUCUMBERS about 1/8 inch thick. Place in a non-reactive bowl and tumble well with 1 t Salt. Let sit for at least 20 minutes, then drain, rinse, and squeeze out excess water.
  2. Cut TOMATOES as appropriate.
  3. Quarter ONION lengthwise and slice crosswise thin.
  4. IF using:   Slice THAI CHILI very thin.
  5. When Cucumbers are ready, tumble together all Salad items until evenly distributed.
  6. In a small jar, combine all Dressing items and shake well. Pour over salad and tumble to coat. Check Salt, the Cucumbers probably still had enough.
  7. Chill for serving - overnight is OK.
NOTES:
  1. Cucumber:

      Preferably use an unwaxed cucumber that doesn't need to be peeled or seeded, like the Persian, English, or Japanese. If all you have is the standard waxed green blimps you will need to both peel and seed them before weighing.
  2. Tomatoes:

      Cherry or similar Tomatoes are preferred, cut crosswise in half or quartered depending on size, but larger can be used, cut into chunks.
  3. Onion:

      Red or White.
  4. Vinegar:

      If possible use one of the fine Philippine natural cane vinegars, though coconut or palm vinegar would be fine too. Rice vinegar would also work, as would Cider Vinegar if you haven't the others. For details see our Vinegars and Souring Agents page.
  5. Fish Sauce:

      This clear liquid is as essential to Southeast Asian cuisines as it was to Imperial Rome, and is now used in parts of West Africa. If you are unfamiliar with it, see our Fish Sauce Introduction page.
  6. Sugar:

      Filipinos would likely use more sugar. I have adjusted for California tastes.
