A Philippine style Macaroni Salad is pretty much essential for any Filipino party. This recipe is authentic, except includes Eggs instead of Chicken to make it suitable for ovo/lacto vegetarians - see also Comments

Eggs, boiled
Macaroni (1)  
Carrots
Onions, red
Pineapple rings
Cheddar Cheese
Pickle Relish
Raisins, golden
Mayonnaise
Salt
Pepper
Do-Ahead   -   (25 min)
  1. Hard boil EGGS, shell, chill thoroughly and chop coarse. For best method see our recipe Boiling Eggs.
Make   -   (35 min work - plus cooling time)
  1. Cook MACARONI the usual way in salted water until just a little beyond al dente, but do NOT overcook, it should be reasonably firm and springy. Drain, return to the empty pot and stir in a few drops of Olive Oil to keep it from sticking together.
  2. Dice CARROTS fine. I use a julienning vegetable peeler to reduce the carrot to narrow strands, then cut the strands crosswise into tiny dice.
  3. Chop ONION fine. Dice PINEAPPLE quite small. Dice Cheese about 3/8 inch. Mix all with Pickle Relish and Raisins.
  4. Pour Mayonnaise into a large mixing bowl and whip in the Salt and Pepper. Taste for seasoning.
  5. Stir in All Items until well distributed.
  6. Refrigerate well before serving, preferably overnight to let flavors blend.
NOTES:
  1. Macaroni:

      Weight is uncooked. Midsize Elbow Macaroni is almost universally used.
  2. Comments:

      There is almost no such thing as a vegetarian dish in the Philippines. Filipinos make a lot of vegetable dishes, but almost all have at least a little pork, shrimp, or chicken in them. While ov vegetarian, this recipe is definitely not Vegan. Vegan versions use vegan mayo, vegan cheese, and often shredded unripe Jackfruit instead of Chicken - it's kind of fibrous like chicken meat (available in the frozen cases of Philippine markets). Vegan Ham is also used.
