Smoked Fish Beansprout Salad

An excellent, tasty table salad, and durable enough for buffet. Final mixing takes only a couple minutes, and then to the table.

Smoked Fish (1)
Beansprouts mung  
Rocket or (2)
-- Dressing
Coconut, fresh
Sambal Olek (3)
Shallot
Garlic
Lime juice

Dressing   -   (15)
  1. Grate COCONUT fine. Cut SHALLOT in half lengthwise, then slice fine crosswise. Cut GARLIC in half lengthwise, then crosswise fine. Squeeze LIME JUICE.
  2. Mix all Dressing items and hold aside until serving.
Salad   -   (15 min)
  1. Cut or break FISH into small pieces.
  2. Boil up sufficient of Water and blanch BEANSPROUTS 1 minute only. Drain and refresh under cold water.
  3. Shred GREENS fine.
  4. Toss together all Salad Items and hold aside until serving.
Finish   -   (5 min)
  1. At serving time, add Dressing to the Salad mix and toss until uniform. Portion into salad bowls, or place in a large serving bowl.
NOTES:
  1. Smoked Fish:

      Officially, this should be Smoke Tuna, though Sri Owen uses Salmon when in England as Smoked Tuna is costly and hard to find there (and here), and she likes the color. The photo example was made with Yellowtail Amberjack, smoked in my stovetop smoker. Amberjack can probably be had in Indonesia, Salmon not so much.
  2. Rocket:

      [Arugula]   The pattern recipe also allows Cos Lettuce (Romaine Letuce). I used Green Leaf Lettuce which is closer in color and texture to Arugula, but neither lettuce has the mustardy bite of Arugula.
  3. Sambal Olek

      This is the basic hot sauce in Indonesia. It is widely available in North America under the Huy Fong label. This amount will not make the salad very hot, but if very chili adverse it can be left out.
  4. Comments:

      This salad can be made the evening ahead, with the Salad and Dressing mixes refrigerated in separate plastic bags. Dressing added to salad and tossed soon before serving. The garnish in the photo is Crispy Shallots.
