Bean salads are popular all over the Caribbean. Durable for make ahead, attractive, and excellent for table, buffet, or picnic. Very well liked at parties.

can Pigeon Peas (2)
can Black-eye Peas (3)
Onion, red
Bell Pepper red
Tomatoes, tiny
Cilantro
-- Dressing
Lime Juice
Garlic
Olive Oil ExtV
Salt
Pepper
Chili Pepper (4)

Salad   -   (25 min)
  1. Drain and rinse CANNED BEANS. Mix.
  2. Dice RED ONION about 1/4 inch. Separate all the layers.
  3. Cap and core BELL PEPPER Dice about 1/3 inch.
  4. Cut TOMATOES in half crosswise - or cut to similar size if using larger Tomatoes.
  5. Strip off CILANTRO leaves and chop them medium. Measure is after chopping and lightly packed.
  6. Place all Salad items in a mixing bowl and tumble until well distributed.
Dressing   -   (10 min)
  1. Squeeze LIME JUICE.
  2. Crush GARLIC and chop very fine.
  3. IF using: Chop CHILI very fine.
  4. Mix all Dressing Items in a small jar. Shake up well and pour over the Salad. Tumble to coat.
  5. Serve cold.
NOTES:
  1. All Beans

      I use all canned beans, for convenience and because they are usually more intact than cooked from dry. Each can contains about 1-1/2 cups of Beans. Goya is a top brand, unless you are still boycotting them for supporting Donald Trump on TV (first term).
  2. Pigeon Peas

      These are typical of the Caribbean. Canned "Green Pigeon Peas" [Gandules Verdes] are available in the Goya brand where there are significant Latin American communities. Unlike other canned beans, they are canned from fresh. Fresh frozen Pigeon Peas [Arhar. Red Gram (from the flowers)] can be found in the frozen cases of some Indian markets.
  3. Black-eye Peas:

      These may be replaced with Chickpeas or Black Beans.
  4. Chili Pepper

      This can vary from none to 1/2 Scotch Bonnet depending on region. For Cuba, Dominican republic, Puerto Rico, Venezuela - none. For Jamaica, Scotch Bonnet or Habanero. Thai and others also used - use your own best judgement as to what kind and how much.
  5. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
