A "last minute" thickener for finishing soups and sauces without lumps - very easy to make in minutes with just two ingredients, and keeps well.

Butter (1)  
Flour (2)

You can make this in any quantity, but most recipes only need 1 or 2 Tablespoons.

Make:   -   (5 min)
  1. Soften Butter to room temperature.
  2. Place Butter and Flour in a small bowl and crush together with a fork or some other tool.
  3. Kneed with your fingers until a very even paste.
Use & Store:
  • Whisk into hot soup or sauce until well distributed. It will need one or two minutes at a strong simmer or boil to thicken.
  • This thickener holds up better to reheating than most others, and is less likely to clump.
  • It will keep covered at room temperature for several days, refrigerated in a sealed container for about a month, frozen for several months. In either case make sure it has warmed to room temperature before using.

      Either Salted or Unsalted can be used.
  2. Flour:

      All Purpose (USA); Plain Flour (UK); T55, Farine de Blé (France); Type 550 (Germany); Tipo 0 (Italy);
  3. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
