This is the famous Plowman's Lunch in the form of a Sandwich. Sandwiches are the preferred lunch in England. It can be Vegetarian, and see also Comments.

No amounts are given for ingredients, because you can vary them to your own preference. Make a bit thinner for buffet service than for a lunch sandwich, which may include more of everything.

Build:   -   (5 min)
  1. Slice CHEESE thin or grate.
  2. BUTTER one slice of BREAD. Spread the other with MUSTARD.
  3. On the Buttered Slice, spread with Plowman's Pickle, then top with Cheese and then Arugula.
  4. Place slice of Ham on top of the Arugula and place on the other slice of Bread, Mustard side down. Slice from corner to corner for easier eating.
NOTES:
  1. Bread:

      Regular square sandwich bread is normally used. Some say it should be fluffy white bread, others use whole wheat. Crusts are left on. Today, in England, it is often constructed in a length of Baguette or a roll. Use whatever you prefer (or have on hand).
  2. Plowman's Pickle:

  3. Vegetarian:

      Instead of Ham, use thin slices of white onion or thin slices of apple, or both. The original Plowman's Lunch was vegetarian with fresh sliced or pickled onion instead of ham.
  4. Comments:

      The original Plowman's Lunch was just thick slices of Buttered Bread, chunks of Hard Cheese, and Onion, fresh sliced or pickled, and always Beer or Cider. This was once the standard pub fare, often the only pub fare. Today, it usually includes Ham or a wedge of Pork Pie, but always Beer or Cider (properly hard cider). Note that the name "Plowman's Lunch" was invented by the cheese industry in the 1950s, but this was the standard farmer's lunch for generations.
