This recipe is fairly typical of English Garden Salads, but, of course there are many minor variations. This is an "arranged" salad, final assembly at serving time.

Do-Ahead
  1. Hard boil EGGS, shell, and chill thoroughly. For best method see our recipe Boiling Eggs.
  2. Make SALAD CREAM if not on hand.
Prep   -   (25 min)
  1. Wash and spin dry LETTUCE. Hold for serving time.
  2. Slice Cucumbers fairly thin. Slice Cherry Tomatoes (or Grape Tomatoes) in half crosswise. Slice Scallions crosswise fairly thin, white and green. Tumble to mix.
  3. Grate Cheese on the large grater holes.
Serving   -   (20 min)
  1. Line salad bowls (for table service) or a platter or wide shallow bowl (buffet service) with Lettuce leaves. Spread Cucumber Mix over the Lettuce.
  2. Slice Eggs lengthwise into quarters. Best to use a Wire Cutter. Arrange them on top of the salad, embedding them somewhat.
  3. Scatter Cheese over the salad and decorate with spoons of the dressing.
  4. Garnish with a sprinkling of Chives and serve cold.
NOTES:
  1. Lettuce:

      The recipe calls for "Lettuce with soft leaves" so I use Green Leaf Lettuce. Butter Lettuce or some less common lettuces could be used. For details see our Lettuce & Chicory page.
  2. Cucumber:

      If at all possible use Persian or another cucumber that need not be skinned or seeded. In typical English fashion the pattern recipe calls for "1/4 Cucumber" without specifying what kind or size. Her photo shows unseeded skin-on cuke slices so I presume English cucumber, which results in about 4 ounces. If all you have is the standard green blimps, you will have to peel and seed them before weighing. For details see our Cucumbers page.
  3. English Cheese:

      The pattern recipe suggests Red Leicester, Cheddar, or Double Gloucester. The photo example is made with Red Leicester.
  4. Salad Cream:

      The premier English salad dressing. Heinz brand is available commercially, but it's better made by our recipe Salad Cream.
  5. Chives:

      The pattern recipe calls for chives, presuming the tubular European Chives. These do not appear in the stores where I shop here in Southern California. What they all have is Persian Chives which are not so attractive. Asian Garlic chives would be much better, but you have to buy a big bunch just to get a few, and they keep only about 2 days. So, I just use the thinnest Scallion tops I can find. and slice thin. For details see our Chives page.
  6. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
