A recipe that's about as close as you are going to get without actual fermented anchovies.

Tamareind Paste (1)
Ginger root
Apple Cider Vinegar  
Soy Sauce
Molasses
Allspice
Garlic Powder
Onion Powder
Pepper, blk
Salt

Make   -   (25 min)
  1. Slice TAMARIND from the block and chop it up. If using concentrate, use 2 T.
  2. Slice GINGER ROOT very thin.
  3. In a small saucepan, mix All Items. Bring to a boil and simmer for 15 minutes or so. You want to end up with about 2/3 cup.
  4. Strain and bottle. It'll keep in the fridge for a month of so.
NOTES:
  1. Duros:

      This pasta-like product can be found in markets serving a significant Mexican community - or ordered on-line. I usually use the wheels for this recipe, squares for puffing. For details see our Duros page.
  2. Vegeta:   This is a widely available vegetable seasoning. For details see our Vegeta page. Recommended, but you can skip it if you just want the meatiness.
  3. Comments:   As of this writing (7-2026), you will not find this broth anywhere but on this site. Back in the days before Google I bought some Duros, but had no idea what to use them for. I tried cooking them as pasta, and found them a bit odd - but what really surprised me was the flavor of the cooking water, thus this recipe.
  4. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
