Maple Syrup - Low Calorie

This syrup, flavored with extract of real Maple Syrup is very low in calories, about 2 per Tablespoon. Flavor is very good, and it is Vegan. See Mixing.

Make   -   (1 hr - 20 min work)
  1. Mix Salt and Xanthan Gum.
  2. In a bowl with wire whisk, or in a stand mixer with wire whisk place All Items except Xanthan Gum mix. and mix thoroughly.
  3. Slowly sprinkle in Xanthan Gum mix while whisking (see Mixing). When there are no more white specs and the gel has formed, it is done.
  4. Transfer into Jars and refrigerate. In a sealed jar it should keep for a few weeks in the fridge.
NOTES:
  1. Maple Extract:

      This is available on-line. I use Olive Nation brand, which has good Maple flavor and a good reputation. Ingred: Alcohol, Maple Syrup, Caramel Color, Water.
  2. Stevia Vanilla Sweetener:

      This herb derived sweetener with Vanilla flavor is sold by a number of brands and is available on-line. The brand I use is was SweetLeaf Vanilla Crème. Ingred: Water, Vanilla Flavor, Stevia Leaf Extract, Natural Flavors.
  3. Xanthan Gum:

      You can adjust the amount a little to get the consistency you want. This is a standard thickening agent used in many commercial products. It is made by fermenting simple sugars with Xanthomonas campestris bacteria, and is considered a safe food additive in the USA, Canada, and Europe. E415, CAS 11138-66-2
  4. Mixing:

      I use slow speed mixing. High speed mixing makes a frothy product that doesn't look like Maple Syrup and it stays that way. I either whisk by hand with a wire whisk, or use my stand mixer with its wire whisk at it's lowest speed. It'll take mixing time, but Xanthan gum is water soluble and will all be incorporated. If whisking by hand, you can let it rest a couple of times for the Xanthan to dissolve.
