In North America two different concoctions are called "Italian Dressing", neither of which is likely used in Italy.
Many North American recipes call for "Italian Dressing", unfortunately without specifying which one, so here we present recipes for both - take your pick. I will call them "Regular" and "Creamy".

Regular Italian

 
Olive Oil (1)
Wine Vinegar (2)
Lemon Juice
Garlic (very fresh)
Onion
Oregano dry
Thyme dry
Celery seed
Salt
Pepper

Make:   -   (20 min)
A mini-prep food processor is perfect for this job.
  1. Chop GARLIC and ONION very fine, mix with Olive Oil and Wine Vinegar.
  2. Crush OREGANO and THYME if course, and mix in.
  3. In your spice grinder grind together Celery Seed and Salt (or just measure out 3/4 t celery salt) and blend in.
  4. Refrigerate in a tightly sealed bottle you can shake vigorously to mix. If long refrigerated, you may have to leave it out to warm a little before use.

Creamy Italian


Mayonnaise (3)
-- Seasonings
Garlic (very fresh)
Parmesan Cheese
Wine Vinegar (2)
Olive Oil (1)
Italian Seasoning (4)  
Sugar
Salt
Pepper

Make:   -   (20 min)
  1. Set aside the Mayonnaise in a mixing bowl.
  2. Chop Garlic fine, grate Parmesan and mix them together with all Seasonings item in a mini-prep food processor or blender. Run until pretty smooth.
  3. Pour Seasonings mix into the mayonnaise and mix thoroughly.
  4. Refrigerate and use within a month.
NOTES:
  1. Olive Oil:

      This can be Extra Virgin, Pure Olive oil, or a blend of the two depending on how "olivy" you want it.
  2. Wine Vinegar

      White or Red, your choice. The photo sample was made with Red.
  3. Mayonnaise:

      For safety use a top grade commercial Mayonnaise. Hellman's (east of Mississippi) or Best Foods (West of Mississippi) are considered the best, but Trader Joe's is acceptable.
  4. Italian Seasoning:

      Our recipe for Italian Seasoning is a fairly standard mix in North America. I have no evidence this mix is used in Italy.
  5. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch tt=to taste ar=as required
