Mayonnaise [Mayo] is an emulsion of Oil, Water, Egg, and a souring agent. It has a creamy texture and used a sandwich spread, condiment, and dressing. It is also included in many recipes and as the base for more complex sauces, condiments, and dressings.

Most experts agree that this product originated from Mahón, Menorca, Spain. It was named mayonnaise (from mahonnaise, possibly from salsa mahonesa) when it was adopted by the French, who often claim it originated in Southern France.

An excellent brand is Hellmann's Real Mayonnaise (east of the Mississippi) and Best Foods (west of the Mississippi). Ingredients: Soybean Oil, Water, Whole Eggs, Distilled Vinegar, Egg Yolks, Salt, Sugar, Lemon Juice Concentrate, Calcium Disodium EDTA (to protect quality), Natural Flavor.

Japanese Mayonnaise is similar to the American, but a little more liquid and made with only egg yolks rather than whole eggs. The flavor is noticeably stronger, particularly of Egg Yolk and Mustard. Most brands come in a squeeze bottle with a small spout, suitable for garnishing. Kewpie is the most common brand, Ingredients: Soybean Oil, Egg Yolks, Water, Distilled Vinegar, Salt, Sugar, Mustard Flour, Red Wine Vinegar, Rice Vinegar, Yeast Extract, Natural Flavors.

Vegan Dressing / Spread This is an eggless Mayonnaise substitute for Vegans or persons with egg allergies. Again, Hellmann's / Best Foods is a reliable product, very like their Mayonnaise except using starch rather than eggs as a stiffener. Ingredients: Canola Oil, Water, Modified Food Starch (Potato, Corn), Distilled Vinegar, less than 2% of: Sugar, Salt, Lemon Juice Concentrate, Sorbic Acid, Calcium Disodium EDTA (to protect quality), Natural Flavor, Paprika Extract (for Color).
