Potato & Onion Appetizer

In Bulgaria this very simple appetizer is usually served with fruit brandies. Yes, it's simple, but, potatoes, how can you go wrong?

Potatoes (1)
Onions
-- Dressing
Salt
Wine Vinegar
Olive Oil, ExtV
-- Garnish
Olives, Black (2)  

Make:   -   (20 min)
  1. Peel POTATOES and cut into pieces about 1/2 x 1/2 x 1 inch. Put them in a sauce pan of lightly salted water and bring to a boil. Simmer until just cooked through. Refresh with cold water.
  2. Peel Onions and slice lengthwise into narrow wedges. Soak 15 minutes in cold water to make them milder. Drain well.
  3. Pit OLIVES and slice in half.
  4. Mix all Dressing items in a small jar.
  5. When ready to serve, combine Potatoes and Onions in a serving dish. Shake up the Dressing and pour over the Potatoes. Garnish with Olives.
NOTES:
  1. Potatoes:

      White Rose or similar Potatoes work well here because they hold together well with cooking. For details see our Potatoes page.
  2. Olives:

      These should be Mediterranean style oil cured black olives, but California canned black olives won't ruin the dish. Kalamatas are good because they come from the Balkan region. This garnish is optional.
