An attractive, delicious and refreshing salad that's easy to make those times when you want a little more substance than just greens.

can Chickpeas
Onion, red
Bell Pepper, red
Bell Pepper, grn
Parsley, flat
-- Dressing
Lemon Juice
Wine Vinegar, white
Olive Oil ExtV
Salt
Sugar (opt)
-- Garnish
Eggs Sliced
Prep   -   (15 min + chill)
  1. If using the egg garnish, hard cook your EGGS, peel, and chill
  2. Drain Chickpeas and rinse.
  3. Chop ONION, RED BELL, GREEN BELL and PARSLEY very small. Mix with Chickpeas.
  4. Whip together all Dressing Items and pour over Salad. Chill well before serving.
  5. Serve garnished with Egg Slices or however you wish.
