Beef with Tomato

Amazingly delicious, this recipe should satisfy any beef enthusiast. It's also simple, easy to make and reheats well so can be made ahead.

Prep   -   (2 hrs - 20 min work)
  1. Place BEEF in a pot with water to just cover. Bring to a boil, then simmer until nearly done - about 1 hour for chuck, 1-1/2 hour for round. Remove from the broth, reserving broth. Cool well, then cut into 1 inch cubes.
  2. De-fat Broth using your gravy separator. Boil it down by about half to concentrate.
  3. Bring plenty of water to a boil. Scald TOMATOES for 1 minute and peel. Chop small.
  4. Chop ONION small.
  5. Slice GINGER very thin and chop fine. Crush GARLIC and chop fine. Grind Chilis. Mix all.
  6. Prepare Tamarind if not paste.
Run   -   (3/4 hr)
  1. In a spacious sauté pan or wok, heat Oil and fry Onions, stirring until translucent, then stir in Ginger mix. Fry stirring for a minute.
  2. Stir in Beef Cubes. Fry stirring until Garlic threatens to burn to the pan.
  3. Stir in Tomatoes, 1 cup of the Broth, Tamarind, Salt and Soy Sauce. Simmer uncovered until you have the sauce consistency you want - not too stiff.
  4. Serve hot with plenty of steamed Jasmine rice.
NOTES:
  1. Beef:   Cheap and tough works fine here, but round takes longer than chuck to cook.
  2. Chili:   Adjust to your preference. I use two dried red Thai chilis for satisfying heat. Use Arbols for medium and for even less heat use the common Japones. For details see our Chili Page.
  3. Tamarind:   If your Tamarind is concentrate in a jar, use 2 T, or if it's block use about 2 T, soak and strain. If you don't have tamarind use 2 t lemon juice - not the same, but it's something. For details see our Tamarind page.
  4. Soy Sauce, Dark:   Indonesians use only dark soy sauce. This can be found in most Asian markets - Pearl River Bridge is a good brand.
  5. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
